Claytonia virginica
Common names include Springbeauty and Virginia Spring Beauty.
A low-growing, early spring-blooming perennial native to the woodlands of the eastern half of the United States and Canada. It produces clusters of white flowers striped with dark pink that provide nectar to bumblebees and other native bees. They open on sunny days and close at night and on cloudy days. Plants go dormant shortly after the seeds ripen and disappear to the ground until the following year.
The Virginia Spring Beauty grows from a potato-like tuber. This edible tuber has a sweet, chestnut-like flavor when cooked.
Tolerates a variety of soils, but prefers rich, high humus, acidic, moist soils with good drainage.
