Strawberry Red Rhubarb (Rheum x hybridum ‘Strawberry Red’) is a vigorous, cold-hardy perennial grown for its thick, tender stalks that develop a rich strawberry-red colour and a pleasantly mild, less acidic flavour. The plant forms a bold, leafy clump of large, textured green leaves that provide a strong architectural presence in the garden. This variety is especially valued for retaining its red colour when cooked, making it excellent for pies, sauces, and preserves. It is highly reliable in prairie climates and becomes more productive as it matures.
