6-8’ tall. The leaves are splashed in the centre with Iridescent magenta. Leaves and growth tip have the same rich mineral flavour as lambs quarters. Use fresh or cooked. They dry and powder well too to add to flour mixes in the winter for a nutritional boost. It can self seed vigorously with new flushes appearing in disturbed soil making it an interesting plant for edible perennial gardens. You can also resow regularly for continuous harvests of young plants. Originally introduced to the NA from Alan Kapuler of Peace Seeds via a French botanical garden.

Planting tip: Direct sow outdoors in early spring after the last frost or start indoors 4-6 weeks before.||This plant prefers full sun and well-drained soil.
Harvesting tip: Harvest young leaves and shoots regularly for best flavor. Cut outer leaves first, leaving the growing tip intact for regrowth. Leaves are most tender before the plant begins to flower.
Storage tip: Keep in a plastic bag in the vegetable section of the freezer for up to 3 days.
