Roots and leaves are traditionally used for coughs, congestion, digestion, rheumatism, and urinary support. Famous for candied stems for cake decorating—steam stems like asparagus; naturally sweet with a licorice flavor, and pairs well with rhubarb. Dried leaves make tea or seasoning, and it’s a key flavor in liqueurs like Benedictine and Chartreuse, plus gin and vermouth. Sow in fall, overwinter seedlings in a cold frame, then transplant in spring to a permanent spot (avoid moving mature plants). Thrives in rich soil with dry shade; becomes lush and blooms in year 2–3. Spacing: 12″ (30 cm).
